A peer reviewed paper which describes a study which analyses known species nitrogen content to determine the “nitrogen factor”, which is used in independent analysis of label declarations of named fish content.
The study also proposes a nitrogen factor for salmon mince derived by machine recovery from the residual salmon flesh remaining on the salmon “frames” after removal of the fillets.
