Details

This prison service instruction (PSI) describes how prisons should plan, prepare and serve safe and acceptable food for prisoners. This includes providing a menu that meets the diverse cultural and nutritional needs of prisoners and enables them to eat healthily.

It covers:

  • maintaining clean, safe and secure areas and equipment for food preparation
  • planning varied and balanced menus
  • planning and managing the service of meals

This is a current PSI. It came into effect on 1 October 2010.
